Cauliflower, Farro and Avocado Salad

This nutritious and delicious recipe is from Sasha, a Year 10 Food Science student.

Ingredients:

  • 250ml farro

  • 30ml olive oil

  • 20ml lemon juice

  • 1 minced garlic clove

  • 5ml cumin seeds

  • 1 cauliflower, cut into 1-inch cubes

  • 1 avocado

  • 1 chilli pepper

  • 1 sprig of coriander

  • A handful of sesame seeds

Method

  1. Set the oven temperature to 200°C.

  2. Cook the farro as directed by the manufacturer.

  3. Separately, mix the olive oil, lemon juice, garlic and cumin seeds together.

  4. Toss the cauliflower into the mixture and season with salt and pepper to your taste.

  5. Lay the cauliflower on parchment paper on a baking tray and cook for 20-25 minutes, until it turns golden brown.

  6. Serve with cubed avocado pieces, a sliced chilli pepper, a sprig of coriander and sesame seeds. Don't forget to drizzle with olive oil and lemon juice while serving.
